Heres my recipe for home made Lemon Chillo, great at Christmas or any special event, be careful its potent and addictive! (Hooray!)

You need : One bottle of quality Vodka

200 grams Castor Sugar

Eight Lemons - (must be unwaxed and preferably organic). You need the juice and the zest of all eight before you start.

To make : Pour a small amount (about quarter) of the vodka into a pan and slowly heat up (do not boil), add all of the castor sugar and continue to stir on a low heat until all of the sugar is completely dissolved. Once the liquid is clear remove from the heat and add the juice of all 8 lemons and all of the zest, allow to cool down. Once the liquid has cooled add the remainder of the vodka to the pan and stir slowly then pour liquid into glass bottles (ones that have a good seal on the cap) and put in freezer for about 2 hours. This is to chill it - not to freeze it. Take out of freezer and pour the liquid through a mesh strainer into a clean pan and squeeze as much of the zest at the bottom of the strainer to get every last drop of liquid. Once you have strained clear liquid in the pan then pour it back into glass bottles and return to freezer for about an hour. Make sure that the liquid does not freeze but it must be very cold.

Serve immediately and enjoy!
